Feijoada (Black Beans) Brazil’s National Dish



"Everybody falls in love with feijoada at the first bite.  Feijoada (pronounced  “faysh-ju-ada”) is known as typical Brazil's national dish which literally means black bean stew. In Brazil, 9 of 10 people agree that Feijoada is the favorite dish of Brazilians.

Feijoada emerged at the slavery time, and it was concocted from pieces of pork meat that contained non-chosen parts of the pig: ears, snout, tail and feet. Most of feijoada's recipes include a plenty of pork – the same ones mentioned above and also pork belly (Bacon), ribs, chorizo, and other kinds of meat like Brazilian dried beef (carne seca).

All these meat and beans, slowly simmered are transformed in a tasty and creamy black beans that makes smack the lips of pleasure, and this is why "feijoada" continues to be the favorite dish of most Brazilians and foreigners that visit Brazil.

“Complete Feijoada” (or Feijoada Completa in portuguese) must be served hot with white rice, collards greens, farofa/cassava flour, slices of orange, caipirinha and for those who like with peppery sauce as a side dish. The stew is generally served year-round in restaurants on Wednesdays and Saturdays, and on the weekends when made at home. It is also a requisite dish for a Brazilian feast and other holidays.

Onion, tomato, parsley, bell pepper, garlic, 
bacon, olives, raisins, smoked pork sausage

Put in a big skillet, the bacon and smoked pork sausage cut in little diced. In low fire, let the own fat of them melt a little bit without let burn. Add one tablespoon of butter. Add one medium onion and two large cloves garlic, minced and braise them. 
Then place the peppers and tomate and braise again. And at last, parsley, raisins, and olives minced in little peaces. And again, braise them. 
When all ingredients are sauteed, add half a pound of raw cassava flour and mix until the flour is mixed into the stew. Lightly brown the flour and pour in a platter, because the heat from the pan may burn the farofa.

How to make Brazilian Drink (Caipirinha)


In the Brazil's cuisine is very common to use a salted meats. To prepare a good Feijoada are indispensable four types salted meat: dried meat (ox's beef), loin, ribs, sausage (pork's meat), and bacon. As in some countries does not exist or is difficult to find this kind of meat in the video you can learn to do at home the salty meat. 

The only difference in the way of how to do it, is that isn't necessary to use the dark liquid that he uses. Just salt (Coarse salt or Sea Salt) is used for salting the meats. Another important information that is before making any type of dish with salted meat, it's necessary that all the salt be removed from the meat. Just let the meat soak in water 24 hours before cooking, taking care to change the water 4 or 5 times in this time period. 

The video is in Portuguese but the explanation is simple. Cover completely the meat with salt and place in refrigerator for 24 hours. After this time, remove the moist salt that covers the meat and cover with new salt and refrigerate again for more 24 hours. Then just wash the meat with water to remove the excess of salt and dry it with paper towels. These peaces of salted meats can be stored in the freezer to be used at future revenue.

A explanation: the Feijoada taught in the video is the complete and the most traditional, but if you prefer a lighter Feijoada, you can do only with dried beef, bacon, pork chops, loin of pork and Portuguese sausage. It will be so good as the original.
